Melbourne has pretty good credentials when it comes to non-DOC Italian cheese. Businesses like Alba Cheese Factory and That's Amore churn out the good stuff for the city’s pizzerias and osterias.
But apparently, it’s not enough for Andreas Papadakis, Alberto Fava and Luke Skidmore, the trio behind in-demand CBD restaurants Tipo 00 and Osteria Ilaria.
In 2022 they'll open a pizzeria named Figlia at 331 Lygon Street, Brunswick East. Grana is the attached deli, for which they've enlisted Osteria Ilaria's pastry chef (and budding cheese-maker) Lucy Whitlow. She'll be making cheeses fresh, to be slapped on pizzas, in takeaway sandwiches, and hopefully, available to just take home.
