Until it closed, a table at Chae – a six-seat eatery in the chef’s one-bedroom Brunswick apartment – was one of Australia’s most coveted restaurant bookings. Now you can get Jung Eun Chae’s popular Korean fare at her new restaurant, on a remote property in Victoria’s Dandenong Ranges. And yep, it still seats just six diners. Expect plenty of homemade ferments (gochujang, doenjang, soy sauce, vinegar, kimchi and makgeolli, or sparkling rice wine, among them) from the pioneering chef, who cooked under Chef’s Table star Jeong Kwan in South Korea.
